When traveling I always enjoyed attending one of the local culinary tours. Many times I was surprised to find out what the locals eat – very different from what tourists eat! I usually try to attend at least one culinary tour or cooking class when traveling. Over the past few months I have received quite a few inquiries regarding cooking classes in the Black Forest or Culinary Tours in Freiburg. I had a difficult time to actually locate (english-speaking) people who were able to offer what I was looking for! To make a long story short – after a lot of research (it required me to eat and drink my way through the Black Forest!) , meeting lots of local producers, farmers, cheese makers, chefs, coffee makeres, brewers, wine makers I finally decided Freiburg was ready for an English-speaking Culinary Tour! German Wine?

When it comes to wine everyone has heard of Napa Valley. And of course France, Italy, Australia and Chile. But visiting Germany on a wine tour? Interestingly enough we have more and more visitors from overseas acknowledging the excellence of German wines and wanting to discover them on a wine tour. There are 13 wine regions in Germany altogether. With more than 23,000 vineyards in Baden we are considered the 3rd largest wine region in Germany. The climate here is very warm, vineyards being protected by the mountains and facing the Rhine. Due to the warm climate in this most southern wine region in Germany, Baden is the only wine region in Germany that is considered a Wine-zone B. This is the same category as the famous French wine-growing areas Alsace, Champagne, Loire Valley. That means what’s being produced here has to meet stricter quality standards than wine grown in any other part of Germany. With every sip you taste you will fall in love with German wines. Flammenkuchen – a local specialty

Flammenkuchen is a unique local specialty. Some people say it looks like a pizza. Try it. You will love it! This ‘pizza’ is a specialty you can only get in the Black Forest and the neighboring region of Alsace, and it may be the only native dish that would qualify as “fast food”. Its a favorite at festivals year-around. On the french side of the Rhine river, the Alsace, it’s called tarte flambe, which translates into “cake baked in the flames”. On the German side its called Flammenkuchen or Flammkuchen, literally,  “Flame Cake”. Flammenkuchen is made out of a very thin bread dough. The traditional topping is a mixture of sour cream and creme fraiche, onions and bacon, and spiced with salt and pepper. It is quickly baked in a very hot wood-fired oven and it is normal that it has burned crust at the edges. Its is thin and cools very quickly, so it is normal to eat it very quickly.
